A new study published in ACS Nutrition Science tested a plant based burger made from red quinoa and baru pulp, an exotic Brazilian fruit, on blood sugar responses in healthy adults. The results are worth knowing: The glucose reference food generated a peak blood sugar of 174 mg/dL at 30 minutes. The plant based quinoa burgers reached substantially lower peaks of just 118 to 120 mg/dL. That is a 30% lower blood sugar spike. From a burger.
