    Can AI Prevent the Next Food Poisoning Outbreak? A new review published in npj Science of Food suggests artificial intelligence (AI) could transform food safety from a system that reacts to problems into one that predicts them before they happen. Researchers analyzed more than 160 scientific studies examining how AI is being used across food safety, from detecting harmful bacteria and chemical contaminants to identifying food fraud and tracking outbreaks in real time. The findings highlight a rapidly evolving field that could make global food systems safer, faster, and more resilient. Modern food supply chains are incredibly complex. A single food product may travel through multiple farms, factories, distributors, retailers, and countries before reaching consumers. Every step generates enormous amounts of data, far more than traditional inspection systems can efficiently analyze. This creates an opportunity for AI systems that can rapidly process information, identify hidden patterns, and flag potential risks long before they become public health emergencies.
